Ingredients

  • 5 eggs
  • 3 tbsp liquid cheese (Kraft or similar)
  • 1 onion
  • 1 ripe tomato, cut into small cubes
  • 1 tbsp tomato paste
  • 1 hot green pepper (sliced into rings)
  • 2 tbsp oil
  • Salt and black pepper

Preparation

  1. 01In a wide pan, heat the oil and sauté the onion until softened and golden.
  2. 02Add the hot pepper and tomato paste and stir for a minute until fragrant.
  3. 03Add the chopped tomato and spices, cover over low heat until thickened and fully softened.
  4. 04Whisk the eggs lightly, then pour over the mixture and stir slowly until cooked but still moist.
  5. 05Spread the liquid cheese evenly over the whole surface of the pan.
  6. 06Cover the pan and turn off the heat immediately — the heat of the eggs will melt the cheese into a creamy layer. Serve immediately.
