Ingredients

  • 6 eggs
  • 4 large ripe tomatoes, finely chopped
  • 2 medium onions, cut into small cubes
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • Salt and black pepper (to taste)
  • A pinch of cumin

Preparation

  1. 01In a wide pan, sauté the onion in oil until fully softened and starting to change color.
  2. 02Add the tomato paste and stir with the onion, then add the chopped tomatoes.
  3. 03Cover the pan and let the tomatoes cook down over low heat for 10–15 minutes until the sauce thickens.
  4. 04Season with salt, pepper, and cumin, then make wells and add the eggs.
  5. 05Cover the pan for 5 minutes until the eggs set (sunny-side), or stir gently if you prefer them scrambled.
