Ingredients
- 6 eggs
- 4 large ripe tomatoes, finely chopped
- 2 medium onions, cut into small cubes
- 2 tbsp tomato paste
- 3 tbsp olive oil
- Salt and black pepper (to taste)
- A pinch of cumin
Preparation
- 01In a wide pan, sauté the onion in oil until fully softened and starting to change color.
- 02Add the tomato paste and stir with the onion, then add the chopped tomatoes.
- 03Cover the pan and let the tomatoes cook down over low heat for 10–15 minutes until the sauce thickens.
- 04Season with salt, pepper, and cumin, then make wells and add the eggs.
- 05Cover the pan for 5 minutes until the eggs set (sunny-side), or stir gently if you prefer them scrambled.
